My favorite salad (and evening meal). 1 minute to prepare

This story will take longer to read than to prepare this lovely salad!

I can’t cook. My mom never taught me. She did everything for me!

So I ain’t a chef of some kind!

But I consider myself really good at making simple, inexpensive and very delicious meals. I am not a dieting freak but I try to eat healthily. I’m a running freak! I always used to run but in the last year and a half, I’ve reached incredible (not very humble, I know) heights with my running form. I am now at 60–70 miles a week. To run better and faster, I must stay lean. I have big goals for my future marathons!

So here. The ingredients:

Arugula (about $3 at Trader Joe’s)

Olive oil

Balsamic glaze

Salt & pepper

Parmesan cheese. It’s also possible to add some other cheese crumbles — like feta, blue, or goat. It’s also possible not to add any cheese! You get an even lighter version of this salad. If you do add cheese, you don’t need to add any salt.

I should’ve put a glass of wine next to this to make this amateur photo session more complete. Indeed, I often have one when I eat this!

Once or twice, I boiled chicken breast and added pieces of chicken to this salad. But this takes longer of course and I prefer the simple version I described above.
