I don’t live a single day without vegetables. Here’s one secret recipe. Thank me later.

I’m not a vegan or vegetarian. In the last couple of years, I have reduced my meat intake to a bare minimum but I’d still have a piece of steak every now and then or even a fried sausage.

As I’m devouring my third bowl of kale now after my absolutely awesome eighteen miles long run (I know, I know I’m showing off, I’m all about running; I just completed another week of running seventy miles), I’m realizing: all of my evening meals are mostly vegetables. To be more precise it’s absolutely always vegetables. If there is something else — meat or chicken or fish, it’s an occasional side dish.

Importantly, it’s not that I’m on some kind of a diet. I just love vegetables. Here’s what I eat: arugula, kale, sprouts, cauliflower, tomatoes, beets, radish, and mixed salads. I like my sprouts really roasted. And I love how my Mom cooks (how — I don’t know) cauliflower.

But I don’t need my Mom nor my dear wife to cook my vegetables. Sorry, my Mom and my wife.

What I do is grab a bowl. Put a lot of vegetables in it. Tonight kale for example. Then I pour quite a lot of olive oil. Then I add salt and pepper. Sometimes I add some parmesan cheese. Often, I also add balsamic vinegar or balsamic glaze.

Time to prepare — one minute, no exaggeration.

Usually, I have two or three portions so I repeat. Three minutes to prepare. This is me right now.
